Ingredients

  • 1.5 pounds of lean beef (such as sirloin or flank steak)
  • ¼ cup soy sauce (gluten-free tamari for gluten-free option)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon liquid smoke
  • 1 teaspoon garlic powder (adjust for Low-FODMAP)
  • 1 teaspoon garlic powder (adjust for Low-FODMAP)
  • 1 teaspoon black pepper
  • ½ teaspoon paprika
  • 1-2 teaspoons keto-friendly sweetener (optional)
  • Pinch of red pepper flakes (optional for added heat)

Instructions

  1. Place the beef in the freezer for about 1 hour to firm it up, making it easier to slice thinly.
  2. Cut the beef into thin strips, about ¼ inch thick.
  3. In a bowl, mix soy sauce, apple cider vinegar, Worcestershire sauce, liquid smoke, garlic powder, onion powder, black pepper, paprika, and sweetener (if using).
  4. Place the beef strips in a resealable plastic bag and pour the marinade over them. Seal the bag, removing excess air. Massage the marinade into the meat, ensuring all strips are coated. Refrigerate for at least 2 hours, or preferably overnight.
  5. For Dehydrator: Arrange the marinated beef on dehydrator trays and dehydrate at 160°F (71°C) for 4-6 hours or until dried to your liking.
  6. For Oven: Preheat the oven to its lowest setting. Place the marinated beef on a wire rack over a baking sheet and bake for 3-4 hours.
  7. Once the beef jerky is fully dried, let it cool completely. Store in airtight containers or vacuum-sealed bags.
